Grundy Center, IA: As every chef knows, the best tasting and most economical foods are the ones that are in season. The chef and dietitian from Grundy County Memorial Hospital are taking advantage of the summer season’s goodness by touring local Farmers Markets. Chef Breanna Staker and registered dietitian Crystal Petersen, Food and Nutrition Services Manager, will be at the Gladbrook Farmers Market on Wednesday, August 7, 4:30 – 6:30 p.m., shopping for fresh vegetables and fruits to be served in special recipes in the hospital’s East J Café, and for patient and resident meals in the hospital and Long Term Care. For those wondering what dishes to make from the market’s products, recipes and samples of foods made with what’s in season at the market will be available. “Eggplant is a great example of a wonderful and healthful food, but people aren’t sure what to do with it,” remarks Petersen. “We’ll be providing some ideas and inspiration for using the nutritional goodness that’s available from our local farmers markets.” The Farmers Market Tour has visited the Grundy County Fair Farmers Market, and plans to visit the Conrad Farmers Market that is part of the Taste Iowa celebration on Saturday, August 24th. Chef Bre will be furnishing samples and recipes for salsas and chutneys, based on the season’s fresh tomatoes, peppers, and onions. In addition, the chef’s fresh recipes are furnished on the hospital’s website, www.grundycountyhospital.org and Facebook page.
Kohlrabi? Kale? Using garden fresh vegetables in recipes that are easy to incorporate into mealtime is the goal of the Grundy County Memorial Hospital Farmers Market Tour. Visitors to the hospital’s display in Gladbrook on August 7 can expect samples and recipes from hospital Food and Nutrition Services Manager Crystal Petersen, right, who provided samples of Kohlrabi Slaw at a recent Farmers Market in Grundy Center.
